Food Dictionary

Hummus: dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is a popular food throughout the Middle East.

Monkey Gland Sauce: The piquant sauce features a blend of fruit and spices and is often used with steak, hamburgers, pork ribs or chicken. The sauce does not involve monkeys in any way

Peri Peri: An African Portuguese sauce is made from tomato, chilies, onions, ginger, and a variety of different herbs and spices. Spicy, not hot.

Tofu: a soft food product prepared by treating soybean milk with coagulants (as magnesium chloride or diluted acids) — also called bean curd

Couscous [koos-koos]: a staple of North African cuisine, couscous is made from semolina flour.

Chutney: a traditional condiment with curries. Made from apricots, apples, spices, vinegar and sugar cook doe

Bunny chow: is a slang term for a South African fast food consisting of a hollowed out loaf of bread filled with curry. Does not contain bunnies.

Boeri burger: a home made South African farmers sausage made with 75% beef and 25% sausage. It is seasoned with coriander, clove, pepper, thyme, and vinegar.

Kibbi:  a Lebanese dish made of pumpkin, bulgur wheat, chickpeas, mint and spices that is deep fried and served like the falafel

Samosas : curried ground beef or vegetables mixed with cilantro(light) and onions wrapped in wonton pastry and deep fried. Served with rice and chutney or by the piece

Falafel: a Middle Eastern dish made of ground chick peas and spices formed into balls and deep fried. Contains flour.
Bobotie : is a South African mild curried ground beef meatloaf baked with an egg custard topping. Moist and soft.

Tabbouleh [tab(b)ouli] : is made of bulgur wheat, finely chopped herbs, and spices.

Tumeric: also known as the poor mans saffron. Yellow coloring and related to ginger.

Lemon Tahini: contains lemon, garlic, tahini and spices; served with Kibbi and Falafel.

Chakalaka: is a simple, spicy relish made of cabbage, cauliflower, onions, and other vegetables and beans.

Pakoras: Indian fritters made from potatoes, spinach, cauliflower and garbanzo been flour. Deep fried and served with chutney.

Venison: is the culinary name for deer meat, whether hunted or farmed.

Quinoa [keenwa]: is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. It has a good amount of calcium, phosphorus, and iron and is Gluten free.

Sosatie: a mild sweet and sour curry marinade. Light and tropical flavors.

Boere Wors: a home made South African farmers sausage made with 75% beef and 25% pork. It is seasoned with coriander, clove, pepper, thyme, and vinegar.

Pap: a traditional porridge made from ground maize. Also known as African grits.
